As a working mom, I have a lot of things going on each week. Planning what I eat for lunch each day usually falls by the wayside. To be honest, if I don’t plan anything, I will probably eat something unhealthy from one of the many fast food restaurants near my office. I never feel good after eating fast food, and the regular afternoon slump is multiplied from the heaviness of my lunch time meal.

One thing that I do to combat this is to have a variety of Lean Cuisine® meals at the ready, either in my home freezer or in my work freezer. They are easy-to-eat, so if I need to eat at my desk, it’s totally fine. I also keep them at home for busy weekends when I want something hearty to last me through the afternoon. This week, I’m having the Vermont White Cheddar Mac & Cheese, Sweet & Spicy Korean-Style Beef, Sweet Sriracha Braised Beef, Butternut Squash Ravioli, and Orange Chicken. I love that I had not only a variety to choose from, but they also keep me going through the afternoon. If I had to choose a favorite it would be the Sweet & Spicy Korean-Style Beef.
