In my Spring Reading List, I included Joyoux Detox by Joy McCarthy. I am a huge fan of Joy’s, because she not only showed me (through her first book Joyous Health) how to eat properly, but she also changed the way I view food. It’s not just for our energy, but it can be healthy and delicious. I’ve been thumbing through her Joyous Detox since it released at the end of last year.
After I read her first book, I decided to change my eating habits slowly. It’s so overwhelming if you do it all at once. And since I am the primary shopper and cook in our house, it’s even more overwhelming when you’re meal planning for four other people. So, last year I conquered one meal at a time. At first, I wanted to find easy meals for breakfast. Breakfast is hard for me, because I love breakfast. I mean, pancakes, sausage, bacon, etc. I love it all!
From her first book, I loved the Joyous Detox Smoothie. The more I made it, the more I changed it to be my own. In fact, I know my recipe by heart now. Well, when I was reading Joyous Detox, I recognized a recipe that was similar.
Have you ever heard of an acai bowl? It’s basically a smoothie in a bowl, only the smoothie is thick like ice cream. You can put whatever healthy topping you want. It’s delicious! In Joyous Detox, there is a Blueberry Bliss Smoothie Bowl that is so similar to my favorite morning smoothie, I knew I would love it. Here’s how I make mine!
For the smoothie bowl, you’ll need 1 cup of almond milk, 1 cup of frozen berries, 1/2 cup of frozen pineapple, and 2 scoops of protein powder (I use VeganSmart Vanilla). The topping I used this day was Bear Naked Vanilla Almond granola.
Place all your ingredients (except the toppings) in the blender.
Blend until it’s smooth. If you have to add more liquid, add almond milk so the consistency stays thick.
When it’s smooth, it’s done and you can add your toppings!
