Fall and winter are my favorite seasons not only because I love style and coziness, but I also love the food. As a family that regularly eats at home, I cook or we are eating leftovers that I’ve cooked 95% of the time. So, I’m really cooking at home all year long, but when Fall rolls around I really ramp up the cooking and baking. Today, I want to share just a few of my favorite fall comfort foods.

This is one of my faves. I’ve never had the real butter chicken recipe, so I should definitely try that. This casserole is so easy to make, and it makes a lot. You would definitely have leftovers or it would feed a large family. The flavors are so warm and cozy, I love it.
We’ve tried quite a few iterations of loaded baked potato soup over the years. This one is our favorite for a few reasons. It’s super easy to make and easily customizable. You can leave the potatoes as chunky as you want. I mashed them with a potato masher so they were mostly smooth and little chunky. You could even put in a blender so it’s a super smooth soup. Of course, we load up ours with green onions, cheese, bacon, and sour cream.
I make this at least twice a year. In fact, leftovers from Thanksgiving are perfect, and you’d have a turkey pot pie! You can do the pie crust from scratch or by the store bought. I bought the Pillsbury Pie Crust and it works wonderfully. Again, it’s so easy and tastes so good.
If you’re from NC, you probably already know what this. I had never heard of this dish before I moved here. This dish has so many names. Chicken and dumplings (which, to me, is a completely different dish), chicken slick, slick pot pie… I’m sure it has many other names. This is just seasoned boiled chicken and pastry and it is so satisfying. Think of it like a thick chicken noodle soup without vegetables. Ahh, I love it. I use Anne’s frozen pastry, so that’s the recipe I’ve linked.
